7 Healthy Weeknight Recipes
(Healthcastle.com) Sometimes finding a recipe in time for dinner can be a momentous task – whether it is poorly measured yields that serve too many or taking longer than expected. Maybe it’s just finding one that actually uses ingredients found in your own kitchen! Here are some of my favourites for simplicity and fab flavours.
Check how long it says it takes to make, then add 5-10 minutes. The recipe writers seem to chop a heck of a lot faster than I do when I get home from work.
Read through the ingredient list first and check that you have suitable substitutes for anything missing in your pantry.
Avoid recipes with packaged or processed ingredients like instant rice, Velveeta, cans of soup. They are going to be stacked with sodium as well as likely hiding dyes and additives. They also tend to be low in nourishing phytonutrients (anti-oxidants and the like), vitamins, minerals and fibre.
See guidelines for choosing a good recipe site here so you can rest assured your product will look and taste something like you expect.
Here are some of my favourite recipes from around the web!
- Lentil Lemon Soup
- Braised Lentils with Italian Sausages (I love the chorizo turkey sausages from JD farms in Langley!)
- Cauliflower “rice”
- 15 minute creamy avocado pasta
- Spaghetti Squash with Herb Butter
- Crispy Cornmeal Chicken
- Grilled Rosemary Mustard Chicken
